Fresh Tomato Egg Scramble {Toddler Friendly}

Getting toddlers to eat their vegetables is pretty tricky but getting them to eat their fruit is a breeze, or at least my toddler is this way.  One vegetable in particular can fall into both categories.  This vegetable is the tomato, or should I say fruit?  Either way you choose to look at it, tomato’s are rich in lycopene which is a powerful antioxidant.  Just wanted to point out that it is also Gluten Free friendly for tots with allergies.   So whichever it is, it is a good thing to try and get your toddler to eat it.  One way to make it look less intimidating is by including it in an already toddler friendly dish…the scrambled egg!


– 1/4 tomato, chopped into mini-cubes

– 1/4 onion, chopped into mini-cubes

– 1 egg

– 1-2 tablespoons cheese (optional) to add some calcium to the dish


– In small saucepan, saute tomato and onion until onion looks opaque and soft.  Cooked onions help add a sweetness to the egg.  They become unnoticable and blends easily into the egg scramble.

– Add the egg and scramble inside the pan.  I do it this way to avoid using another bowl to scramble the bowl.  Cuts down on the dishes I have to wash later.

– When the egg has cooked for about a minute, sprinkle some cheese into it and fold it into the egg.

– Once throughly cooked, spoon it into your toddlers bowl and watch them eat some nutritious tomatos. 🙂
